Lunch ideas???

Kinda tired and don't feel like cooking very much. Anyone have any quick and easy ideas for lunch? keep in mind i have 2 kids to feed also, so something kid-friendly!

    I have the same issue at supper time. I am a single mother of a 2 year old and we don't get home until 6 at night. Which leaves 2 hours for dinner, bath & bedtime. I struggle with finding meal ideas that he'll eat and that won't take up all my calories for the day!

    Chicken quesdaillas with cheese! It's easy and you can make it healthy for you and the kids. Throw some salsa and slices of avocado on the side...yum!

    Every few weeks I make a big batch of soup. Sometimes a couple of different kinds. And then freeze them in individual servings. My favourite two are Curry Yam & Pumpkin and Kale & Sweet Potato. On days when I'm rushed, or 'can't find anything to eat!' I just pull out a bag, nuke and enjoy. A salad and an apple go nice with it and fills me up.
  • One of my family's favorites is what they call "cold tacos". Its like a modified sandwich, but the kids like it because its interesting. Take a tortilla, add lettuce or raw spinach, meat of some kind (tuna in a pouch, thawed frozen fajita steak strips, or sliced turkey are some favorites), sprinkle shredded cheese or not, and add whatever veggies you have that you think will taste good, like tomato, sliced green pepper, or even craisins. Drizzle fat free dressing on it, fold, and enjoy!

    peanut butter, nutella, brownie sammies with a whey protein shake on the side (don't give the whey shake to your kids though)... This was my diet food when I was losing weight.

    I also have been known to put cupcakes, pop tarts, and other low-fat, high carb confections into the sammie - no cooking involved.

    I second the soup... I make big batches of quinoa vegetable soup and kale and white bean soup and freeze in 1 qt. ziploc bags. It's easy to pull out for lunch or dinner and you get large servings for <200 cals.

    I add a half sandwich (veg/hummus or pb&j) or veggies and hummus for lunch and a salad or piece of bread for dinner.
