I need a low calorie, low carb chicken breast recipe?

I've got some chicken breasts in the freezer and I can't figure out a low calorie, low carb dinner to make. I've also got some mushrooms that I'd like to use if at all possible with the chicken.


Let me know what some good recipes are! :)

    Chicken, mushroom omlette - I like to add some ham, onion, peppers and a bit of cheese too!

    Chicken stir fry...with mushrooms, carrots, broccoli, onions.

    Salsa chicken ... just pour your favorite salsa over the chicken breasts, top with some mushrooms and maybe a little cheese. Throw in the oven and bake until the chicken is done. Yummy!!!

    bake the breasts and make a creamy garlic and mushroom sauce

    Throw your chicken in a crockpot with sliced mushrooms, onions, any spices you prefer and a little white wine. Set it and forget it.....if you dont have all day, just bake it all in the oven covered/sealed for about an hour. You can change it up by adding different spices and whatever veggies you happen to have around.

    I have a great "Fried" Chicken recipe that is low fat and low carb. Spray a fry pan with Pam (or your favorite non-stick spray). Put chicken breast cut into tenders in the pan. Sprinkle with low fat Parmesan cheese to coat. As the chicken cooks, flip and sprinkle with more cheese until it is coated, browned, and cooked through. 4 ounces is only 3-4 grams of carbs, 30 grams of protein, and 1-2 grams of fat (depending on how much Parmesan you use).

    Sorry, I don't have a recipe for the mushrooms, but I'm allergic to them so I never use them in anything. But maybe you could make a sauce with them to put over the chicken?
