What are quick and easy meals to take to lunch for work? I am burning myself on eating the same foods.

    I've been doing veggie burgers on thin select bread with the special k cracker chips. It's usually around 350 calories and I don't feel deprived.

    Sandwich on low carb whole grain bread ( Pepperidge Farm Light Style High Fiber 40 cal/slice), Slice of Turkey luncheon meat with1 tsp spicy mustard, 120 calories, 19 carbs, 10 protein, 380 sodium, so low you could add lettuce, tomato and pickles or peppers for only a few more calories. I don't add cheese to keep it low.
    1/2 cup of grapes, 52 calories, 14 carbs, 2 cups microwave low fat popcorn. 60 calories, about 10 carbs. :drinker:

    depends on your definition of quick and easy, but these do not require any gourmet skills. I usually cook extra on Sunday and then cook again Wednesday or Thursday....so I can always have healthy food to take with me for lunch.

    Homemade veggie soups. Make them over the weekend, package them up in Gladware and you have a bunch of lunches. I actually put some in the freezer so I don't get burnt out on one type of soup. It really isn't as time consuming as you would think. The longest part is cutting up the veggies. Then thrown them in some water with chicken bullion or chicken broth and let it simmer for an hour or two while you work on something else near by. I think soups are much more forgiving recipes than most other types of recipes.

    This recipe has chicken, but it is really easy, and if you leave out the cheese, sour cream and tortilla chips as garnishes (or use low fat), its is much healthier. http://allrecipes.com/recipe/slow-cooker-chicken-taco-soup/

    I totally forgot about my weight watcher soup I use to make. I am going to cook this this weekend while I am studying for finals. Plus maybe do a low fat homemade chicken noodle soup.

    I made a delicious dinner last night of oven fried chicken and zucchini and yellow squash gratin.
