Crunchy Chicken Salad Pita
I love this - have been eating it every day for lunch
1/2 cup chopped roasted chicken
1/4 cup red/green grapes cut in half
1 stalk celery, diced
1 tbsp walnuts, chopped (I didn't have walnuts on hand so used pecans)
Dressing
1 tbsp plain greek yogurt (I used the no fat kind)
1 tsp apple cider vinegar
1/2 tsp honey
1 tsp poppy seeds (didn't have these so I didn't use them)
1 tbsp lemon juice
1/2 whole wheat pita
romaine lettuce leaves
Set aside chopped chicken, grapes, celery, and walnuts in a bowl.
Stir together dressing ingredients in another bowl and pour dressing over chicken mixture - toss to combine it all
Serve in pita half lined with lettuce.
I ate the chicken mixture in the pita one day and put it over spinach and romaine lettuce the next day for lunch. This is really good and really filling.
