Baked Jelly "Doughnuts"

This was a recipe I found in one of those fundraiser cookbooks (love em). I modified it a little to cut the calories.

1 1/2 c. all purpose flour
1/2 sugar
2 t. baking powder
1/4 t. salt
1/4 t. nutmeg
1 lg. egg
1/2 c. milk (I used skim)
1/3 c. unsweetened applesauce
1/2 t. vanilla
12 t. no sugar added preserves

For topping:
Mix 1/4 c. sugar with 1/2 t. cinnamon
Melt 2 T. butter (I used Tastes Like Butter from Aldi)

Preheat oven to 400. Spray 12 cup muffin pan with cooking spray. Mix dry ingredients. In a separate bowl, mix egg, milk, applesauce, and vanilla. Slowly add dry mix. Stir just until moistened. Spoon half the batter into the muffin cups. Put one teaspoon of preserves in each cup. Spoon on remaining batter to cover. Bake doughnuts until deep golden brown, about 18-20 minutes. Turn out onto rack. Brush doughnuts with melted butter and roll in cinnamon and sugar mixture. Serve warm. Can be stored for 1 day in airtight container. Makes 12 doughnuts.

Mine came out to be 130 calories each. Makes a nice breakfast or dessert/snack.
