Has anyone out there got a good tried and tested recipe for vegetable soup.

    Not very difficult at all.... cut up some onions and garlic, and fry them in a little oil on the bottom of your soup pot. Once they are translucent, put in your cut up veggies (any of your choosing, really.... I like carrots, potatoes, ginger, etc... but you can pretty much use whatever you'd like), and cover it all with veggie stock or water. Throw in a bay leaf if you like, or whatever other spices. Simmer gently for as long as it takes for the veggies to become soft. You can either leave it like that, or use an immersion blender to make it a thick, yummy soup.

    Soup is very forgiving.... if you want it thicker, boil it longer. Thinner, add more stock. The combination and amount of veggies is pretty much up to you.

    I am a big fan of soups and have been making one particular soup for my diet and that is sweet potato and butternut squash soup, it's really delicious, I add a bit of ginger to it and if I need to add fat grams to my meal plan then I add some creme fraiche once it's in my bowl. Let me know if you want the recipe. I also have a quick and easy recipe for minted pea soup, chicken soup, leek and potato soup etc.

    MMMMMMMmmmm I love making soup. The things is, like someone above mentioned, soup is SO forgiving.... it's really hard to ruin it... thus I don't have any recipes for it, I just throw everything together. lol.

    I make a chicken noodle soup or ham bone bean soup at least once a week! We're able to eat of it for like 4-5 days and they're really filling!

    Hello, here is the weight watchers recipe: makes 4, 1 cup servings
    2/3 cup sliced carrots
    1/2 cup diced onion
    2 garlic cloves minced
    3 cups fat-free broth
    1 1/2 cups diced cabbage
    1/2 cup green beans

    1 tbsp.tomato paste
    1/2 tsp. dried basil
    1/4 tsp.dried oregano
    1/4 tsp. salt(optional)
    1/2 cup diced zucchini
    spray a large saucepan with nonstick spray,heat. saute the carrot, onion, garlic till soft. about 5 min. add next 7 ingredeints cook till beans are tender. stir in the zucchini and heat for 3 to 4 min.serve hot.
