RECIPES!! Chicken tortilla soup!

I found this recipe online and then I added some things to it! It was delicious, I fed it to my whole family and no one would have guessed it was low calorie!
Chicken tortilla soup
Ingredients
* 3 small skinless chicken breast
* 1 clove of garlic
*1 teaspoon of cumin
*30 oz of fat free no sodium added chicken broth
*1/2 cup of onion
*2-5 chopped up jalapenos (depending on if you want it spicy or not)
*diced tomatoes (no sodium added)
*diced tomatoes with green chilis (no sodium added)
* 1/2 cup of water
*1/2 cup of fresh carrots chopped small
*1/2 cup of celery chopped small
*1/2 cup of fresh zucchini chopped small
Directions
Spray nostick pray in medium-large size skillet
Add your garlic and let cook for 1 min
Add your onion, carrots,celery, jalapenos and zucchini let cook for 3 mins
Add your skinless chicken cut in small cubes
Let cook for 10 mins or until chicken is no longer pink
In a medium-large skilled pot pour your chicken broth and combine your cumin, diced tomatoes and tomatoes w/ green chilis and your 1/2 cup of water.
Let your mixture come to a boil and boil for 3-5 mins
After your mixture has boiled for 3-5 mins add your chicken and veggies
Let it cook on medium for 10-20 mins
The website i got the majority of the recipe said for 1 1/2 cups it was 160 calories. The only thing I added to the soup was the carrots celery and zucchini that will add a few calories to your total. It was delicious! Hope you enjoy!!!! And of course if you want to add the tortilla strips is extra calories also.

It was! My boyfriend who is anti-healthy food went back for 2nds... not once but twice! of course... he ate a little too much calories but for me the 1 1/2 worked! :laugh:0

My wife makes chicken tortilla soup very similar to this. I can verify that it is amazing. I think I like it more than chili.
I like to add some crumbled up tortilla chips, fat free sour cream, and a bit of cheese. I can have a very large bowl (2 cups of soup) with all the fixins for about 500 calories.0 -
I've been making a similar soup for years, but I add 2 TB A-1 steack sauce, a 1/2 cup salsa, and some chili powder. It really gives it a kick. I also sometimes grill the chicken breast, which gives it more depth of flavor.0

Thanks for the recipe. I love jalapenos in soup; what great flavor! Do you know the sodium count on this soup? It's so hard to do low-sodium soups, even when you make them yourself.0

but the chicken broth and all the tomatoes were no sodium/ no sodium added.0 -
