Diet Peanut butter and Oatmeal Cookies

Ingredients

Betty Crocker - Peanut Butter Cookie Mix
Diet Coke 8 oz
Quick Cook Steel Cut Oats, 1 cup

Preheat oven to 375. Mix cookie mix, oats and diet coke together in a bowl. Spoon by tablespoon onto cooking sheet and bake 11-12 minutes. Let set for a few minutes before placing on cooling racks. Enjoy!!

Per Cookie: 81 calories, 13 carbs, 2 fat

    I am guessing anytype of soda would work? We have cleared aspartame from our house and I was wondering if another low cal sodas would work too.

    I like that you said that because I heard that cooking aspartame is one of the worst things you can do, although I don't have the scientific proof to go into it. I do know that they have diet pop with only splenda and they make no calorie jones soda with splenda also, FYI.

    Ive made 'diet' cookies and muffins with regular gingerale rather than diet pop, and its always turned out fine for me.
