Recipes for One

I have never really cooked for myself before, so I would greatly appreciate any recipes suggestions. Specifically, I am lookin for any easy recipes for one person? I am looking for recipes that do not require a lot of ingredients. Also, it would be great if the nutrition information was available for the recipes. Thanks!

    Me, too!

    I have picked up a couple of copies of Taste of Home's "Cooking for Two" magazine. It has recipes for two servings. Pretty good, but not specifically for weight loss.

    if I were you I'd buy some plastic things/lids and make meals for two and save 1/2 for another meal. It's just that when you buy meat it's not really sold in 4 oz :)

    How about this one......

    Chicken and rice with veggie.....

    One Large chicken breast
    1 cup brown rice
    2 cups veggie (broccoli, cauliflower, whatever you like frozen)
    2 cups water or low sodium chicken broth...

    put rice in bottom of 4x4 square baking pan, stir in water...add chicken breast and veggies and any salt/pepper seasonings that you'd like...cover with foil and bake in 350 for 1 hour....serve with salad...divide in half and you can freeze if you're not going to eat it for lunch or something....

    You can always add cheese if you want the extra calories....

    You can always make larger batches of soup to freeze in individual servings :)

    You can get calculators that will help you modify recipes from say 4 to 1. Taste.com.au has great recipes. And has a calculator that you can use to make less serves - http://www.taste.com.au/calculator/
  • The simplest meal for one recipe I've encountered is meat + steamed veges. It's not particularly impressive, but as a staple meal it's pretty easy to prepare and fairly healthy. Meat is simply grilled on a non-stick pan, and veges are simply cut up and added to the colander then steamed for the appropriate duration

    When buying meat, you'll often get packages with more than one piece in them. Buy some freezer bags and simply bag up and freeze the meat in individual meal-sized portions, this way you can defrost only what you want to eat and don't have to worry so much about leftovers. Provided you know you'll be home for dinner, the best way to defrost it is to transfer it to the fridge the night before (although you can use the microwave to defrost it if you need to).

    With veges, just cut up as much as you plan to eat. It's a simple matter of using a cooking timer to ensure they're all steamed for appropriate intervals (google is your friend here, but here's a few common ones: Potatoes - 20min, Carrot - 8min, Broccoli -5min, Green Beans - 5min).

    I make meals for 2 and split them accross 2 nights. I will either cook fresh both nights, do a little prep for night 2 on night one, or cook the entire on one night for re-heating on the second night, depending on the dish and how I feel at the time.
  • Thanks for these ideas. I hope to use them all. There are actually many more options for meals for one than I had realized.

    I am just so indecisivie, so I never know what I want to eat.....I then proceed to keep eating (everything) until I am completely stuffed or run out of food. Maybe making some meals, like actually taking the time to cook, will help me to know what I have eaten and should be content.
  • If you want an even simpler dinner, just buy the frozen grilled chicken, only needs 2-3 minutes in the microwave. Then buy the frozen steamfresh veggie bags, just need 5-6 minutes in the microwave and there you go. A healthy dinner just under 10 minutes.
