Eat Clean Diet-Hearty White Bean Chili

Ingredients
1 lb. Dry great northern beans or white kidney beans, rinsed and picked over
4 C. Low-Sodium chicken broth
2 C. Yellow onions chopped
3 Large garlic cloves, minced
2 tsp. Cumin
1 1/2 tsp. dried oregano
1 tsp. dried ground coriander
1/8 tsp. ground cloves
1 (4 oz.) can of green chlies
2 lbs. boneless, skinless chicken or turkey breast, grilled, cubed
1 tsp. Sea salt

Instructions:
Place beans in a soup kettle or dutch oven. Add enough water to cover beans by two inches. Bring to a boil. Let boil for 5 min. Remove from heat and let stand covered for 1 hour. Drain and rinse. Discard liquid.

Place beans in a slow cooker. Add the broth, onions, garlic and seasonings. Cover and cook on low heat for 7 hrs or until beans are not quite tender. Add the chilies, chicken and sea salt. Cook for another hour until beans are tender.

442 Cal, 50g Protein, 4g Fat, 51g Carbs, 6g Fiber (the fiber is estimated, the recipe didn't state the amount) I have added this to the food database.

I cooked this over night and am taking it for my lunch. The sample bite I had tasted great!

    It doesn't say. I am going to eat a cup and count that as a serving. Sorry that's not much help.

    Could you substitute browned ground turkey or chicken for the cubed chicken? Might make it more like chili.:smile:
