Easy Turkey Taco Soup

I threw this together the other night loosely based on a couple of recipes I had looked at. This comes in around 325 calories for a full meal serving. 34 g carbs, 11 g fat, 20 g protein, 7 g fiber, & 922mg sodium....I know it is a bit sodium heavy...it was looking pretty good until I added the can of tomato sauce which I could not find in a low sodium version.
Serves 10
20 ounce package of ground turkey
1 red bell pepper, seeded & chopped
1 medium yellow onion, chopped
2 jalapeno peppers, seeded & chopped
1 tsp. minced garlic
1 tsp. olive oil
2 cans diced tomatoes with no salt added
1 can tomato sauce (no salt added if possible)
4 cups water
1 package taco seasoning (Taco Bell had the least sodium of the ones I had on hand)
1 can low sodium black beans, rinsed and drained
1/2 bag frozen corn
1/2 bag frozen sliced carrots
1. Heat olive oil over medium-high heat in a large pot. Add onion, garlic and peppers, cook until tender.\
2. Add ground turkey. Cook until browned and drain off grease. Add tomatoes, sauce, water and taco seasoning, bring to a boil.
3. Lower heat and simmer for 10 minutes. Add beans, corn and carrots, simmer for another 15 minutes or so.
Enjoy!

MMMMM! This sounds absolutely wonderful. I love soup! Can't stand salad most of the time, so soup has always been a great way to get a filling, low calorie, high vegetable meal for me. Thanks so much for sharing.0

I am thinking next time I will just add another can of the low sodium tomatoes instead of the sauce maybe...0
