  • I make a marinade of fresh lemon or lime, salt, pepper, garlic powder,and a little oil. you only need to marinate the fish for a few minutes, then grill it on the grill or the George Foreman. Be sure to spray your grill wih Pam so it doesn't stick! Serve with Salsa!

    I made this tonight - Mmmm Mmmm
    Very, very simple but so good! See recipe below.

    What I substituted:
    I used the BestFoods Mayo w/olive oil. I also used shredded Parmesan cheese instead of grated
    and used a mixture of 1/2 Italian Bread Crumbs and 1/2 Panko breading (love Panko! less calories!).
    Sprayed the top with Pam and used my sea salt grinder to salt the top.

    I enjoyed this recipe with 1 small baked red potato, 1/2 C steamed spinach (w/ a mist of olive oil) and
    a small sourdough dinner roll (with 0 calorie butter spray).

    And STILL was within my daily calorie limit. :happy:

    Herbed Mahi Mahi

    This herb-seasoned mahi mahi is a tender and flavorful fish dish with a simple coating of bread crumbs. Serve this herbed mahi mahi recipe with several green vegetables and rice. You can substitute flounder, halibut, red snapper, or almost any other fish, if you prefer.

    Preparation time: 10 to 15 minutes
    Cooking time: 20 to 25 minutes
    Yield: 4 servings

    1 lemon
    2 cloves garlic
    1/2 cup fat-free or lowfat mayonnaise
    1/4 cup fat-free Parmesan topping or grated Parmesan cheese
    1 teaspoon dried basil
    1 teaspoon dried oregano
    1/2 cup herbed bread crumbs
    4 4-ounce mahi mahi fillets
    Freshly ground black pepper
    2 tablespoons chopped fresh parsley

    1. Preheat the oven to 350 degrees F.
    2. Juice the lemon.
    3. Peel and mince the garlic.
    4. In a small bowl, place 1 tablespoon lemon juice, the garlic, mayonnaise,
    Parmesan cheese, basil, and oregano.
    5. Mix well.
    6. Place the bread crumbs on a flat plate.
    7. With your hands, rub both sides of the fish with the mayonnaise mixture.
    8. Coat each fillet with the bread crumbs on the plate.
    9. Place the fillets in a 13-x-9-inch baking dish.
    10. Season with pepper to taste.
    11. Bake for 20 to 25 minutes or until the fish is opaque in the center.
    12. Sprinkle with the parsley and serve.
