Meringue Puffs (12 calories)

Here's one of my favorite Christmas cookies that happens to only be about 12 calories each. They are so light and airy, and they just melt in your mouth!
2 egg whites
2/3 C sugar
1/8 tsp cream of tartar
1/2 tsp peppermint extract
a pinch of salt
a few drops of food coloring (optional)
Preheat oven to 350 degrees F.
Line cookie sheet with parchament or brown paper.
Beat egg whites until very stiff. (This is the most important part.)
Add cream of tartar, sugar, salt, extract, and food coloring; mix well.
Drop by small spoonfulls onto lined cookie sheet. (Keep them small. If they are too big, they might end up gooey in the middle.)
Place in oven and turn off oven. Leave in overnight. (Do not open oven, it lets heat out.)
Also delicious with lemon extract instead of mint!
And I like to stir in mini chocolate chips at the end, but it adds more calories. Last time I added 3/4 C mini chocolate chips, and it went up to 29 calories each. It would probably be fine with less added.
Edited to add: 1 batch makes 48 cookies.

Meringues are great; plus there are SO many varieties of way to make them (i.e. peppermint, chocolate, almond). I just read one recipe that had pine nuts in them and it looked SOOOO good.0

ok I made these yesterday they are so good. the really melt in your mouth . and I have no guilt to eat them.
my hubby and 12 year old as well as my 2 year old, all loved these puffs.
