What do you put in your omelet?

I had never even had an omelet before but someone at work suggested I try one. So When I got home this morning I made omelet's for myself and my girlfriend, Bioshocked89. In ours, I put sausage, cheese, tomatoes and spinach and she and I both really enjoyed it.
So I was just trying to think of other stuff I could put in one and figured I'd ask you guys. So what do you put in your omelets?

Mostly more eggs, but sometimes mexicana cheese0

Mushrooms, spinach, and mozzarella. Or tomatoes, sauteed onions and peppers, and cheddar0

mushrooms, onion, ham, tomato, arugula/rocket (added just before I put it under the grill/broiler.
How I make them:
add a small amount of oil to pan, cook all ingredients above, except arugula. When they are cooked to your liking, add egg (I used egg whites only) then let it sit on cooktop on medium for a couple of minutes. Then sprinkle arugula and cheese if you want then put under the grill until its done.

just had one this morning! It's a doozy! Egg whites, onions. mushrooms, bell peppers, spinach, tomato, and instead of cheese. I put about a 1/4 cup of Cottage cheese in there. It was fantastic!0

grated cheese, ham and tomato - grated cheese just enough to taste.. i like to add a little sprinkling in to the pan to add extra flavour to my eggs.. then i shread the ham into small pieces and add cubed tomato.. but i've had a spanish omellete of spicy sausage, ham, cheese, onion, pepper, and cheese before0

you can put just about anything into an omelet. Left over fajita mix(chicken or beef/peppers/onions), veggies only, turkey and cheese, spinach and feta, bacon or ham, avocado and salsa is one of my favorite.0

I put everything under the sun in those bad boys! Cheese, tomatoes, onions, peppers, mushrooms, 1 meat or bacon on the side, 1 TBSP salsa, 1 TBSP F/F sour cream usually. All the veggies in the world & 1 meat is usually how I do it. You can also try spinach, mushrooms, tomatoes, and swiss cheese.0

Where's the "shocked" icon? I live off of omelets, breakfast for dinner is my easy go to meal when I'm feeling lazy. My basic omelet is spinach and cheese, but I put all leftovers in the omelet. Like the chilomelet (chili), or kabom(b)elet (shish kabobs), tacomelet, the list goes on and on. I rarely, however, put chicken in my omelets . . . it makes me feel weird.0 -
Every vegetable in the fridge, and then top with a small amount of ricotta cheese and salsa!0

Have never been able to master an omelette. Never seems to cook enough for me, so I end up with scrambled eggs! I eat them alot though. Bacon crumbles, onion, cheeze. Yum!0

I just put a slice of cheese, i like my omletes quite runny in the middle though and they dont work so well with veggies if they are like that0

I like lots of different veggie combinations. Mushrooms and onions are my most common ingredients. But I also like zucchini, yellow squash, eggplant, spinach,and broccoli. I also frequently add 1/2 to 1 ounce of some variety of cheese, cheddar, jack, and feta are the ones I most often use. Sometimes I'll top it with avocado or chopped tomatoes (prefer both of those fresh rather than cooked inside).
Oh, and if I have leftover taco meat (combination of very lean ground beef and Soyrizo), I'll add that too. And sometimes a chopped up piece of uncured turkey bacon is a nice addition.0 -

If you don't feel confident flipping it, just put it under the broiler for a few minutes to finish cooking it.0 -

I'm a bit lazy in the morning, so I opt to make eggs this way...
Put frozen veggies in a pan with some water and a lid. When veggies are cooked, I put two eggs on top. Put the lid back on and my eggs poach inside. Put in a bowl with a bit of sea salt and olive oil. Eat. I was surprised that even california style veggies taste good with eggs.
Sometimes I put bacon in the pan and then turn it on. Come check later when bacon is almost done, stick in leftover veggies and eggs. Few minutes later its all cooked. Bacon flavours it nicely. Think I'll look for some turkey bacon to lessen the calorie count although it could be hard to find some without the nitrate, not sure.
My usual omelette fixings would be green peppers, green onions, mushrooms, chopped ham and a bit of shredded cheese.0 -

Alton Brown did a Good Eats episode on omelettes that helped me a lot. It's not 'healthy' in the strictest sense, but it's how I learned the technique. His recipe doesn't include additional ingredients, but I pre-cook my veggies before adding them after the omelette is done.

Some cheese, spinach, onions...anything else that may be in the fridge. And then I put ketchup on it
To it make it I soften the veggies in the pan with a little margarine or oil, and then in a bowl I beat the eggs and pour it on the veggies. Cook for a bit, then sprinkle cheese on half, and fold!0 -
I made one this morning with red onion, yellow bell pepper, red bell pepper, and mushrooms. I put some hot sauce on it and had it with turkey bacon on the side. Yum!0

Saute some canned mushroom slices and onion in butter-flavored spray (use a nonstick pan). Add a little frrozen spinach when they are almost done. Pour in some egg-beaters after giving the pan another spray and a good shake to even out the veggies.
With some practice you can do an impressive 'flip' to make a fritatta-like omelette.You can also put a lid on for a few minutes to cook the top if you're not that brave or have real nice floors. I lay on some crumbled feta and some dill for a greek omelette and eat it with a half of a toasted whole wheat pita. Substitute salsa for the feta/dill and you have a pretty good western without the meat.

1 whole egg, 1 egg white and inside the omelet I put a piece of american cheese or shredded cheddar, diced green peppers and sometimes a little ham chopped up0

when my fiance was a manager of a pizza place, we made breakfast pizza with an omelet of eggs, tomatoes, spinach, feta, green and red peppers, onions, pineapple he added chicken and bacon on a thin crust with very light mozz cheese. it was amazing and i miss it so lol0

I use egg whites, ham, chopped bell peppers, and cheese with salsa on top!0

1 whole egg - 4 whites
1 tbs chopped onion
1 tbs chopped bell pepper
1 chopped garlic clove
dash of dill
1 tbs cheese - pepper jack
I cook down the veggies in virgin olive oil, add the dill, eggs and cheese.
cook to perfection - ENJOY!
250 calories, 23 g protein - I don't know the rest - don't care...lol0
