Breakfast Bar Recipes???

I typically eat my breakfast sitting at my desk around 9:30am. Sometimes, I will go heat up some oatmeal, but a lot of times, I want a bar-type breakfast that is easy to eat while still working. Does anyone have a recipe for a breakfast bar that I can make up on the weekends but is lower in calorie/fat, and higher in protein/fiber that tastes good?

    Vegan Oatmeal Breakfast Bars
    8 servings

    Ingredients
    2 1/2 cup oats (steel-cut or quick rolled)
    2 Bananas
    1/4 cup of almonds
    1/4 cup of dried fruit (cherries, raisins or cranberries)
    7 tablespoons of applesauce

    Directions
    1. Preheat oven to 375
    2. Combine all dry ingredients into a bowl.
    3. Mash bananas then add to said bowl.
    4. Add applesauce and mash (easier if you mix by hand)
    5. Onto a cookie sheet shape mix out into bars
    6. Bake for 15-20 minutes.
    7. Set to cool and harden for about 10 mins then enjoy.

    Nutritional Info. (for one bar)

    Carbs - 29g
    Fat - 5g
    Protein - 4g
    Fiber - 4g
    Sugar - 8g

    Vegan Peanut Butter Bars (makes 8)

    4 tbsp organic crunchy peanut butter
    4 tbsp light corn syrup or golden syrup
    1 1/2 cups whole rolled oats
    1/3 cup of dried fruit (I like apricot)
    1 tbsp of wholemeal flour, perferably stoneground

    Prehaet the oven to moderate

    Put the pb and syrup in a saucepan and heat gently until melted, about 3 minutes. Add the oats, dried fruit, and flour and stir well.

    Pour the mixture into a small square/loaf tin thats lined with baking paper that over hangs on the sides (to pull it out easy). Press it in with the back of a spoon and bake in pre-heated oven for 15-20 minutes. Score into bars or squares with a knife while still warm, then allow to cool. Once cool pull out using the baking paper and cut through.

    The bars can be stored in an airtight container for up to 2 weeks.

    I see someone added peanut butter. That's good because adding more protein to this bar would help spread the nutrition and slow down the absorption of the carbs.

    I highly recommend TVP - textured vegetable protein, which is made by Bob's Red Mill and available in many supermarkets. You might want to soften it a bit in some boiling water before incorporating it so it will simply add chew. Otherwise it can be crunchy like grape nuts.
    I add it to my oatmeal every morning. YUM
