Chocolate and Strawberry Stuffed French Toast

I'm watching Healthy Appetite with Ellie Krieger on the food network and it looks YUUUUUUUMY!
Difficulty: Easy
Prep Time: 15 minutes
Cook Time: 8 minutes
Yield: 4 servings
3 eggs
1 1/4 cups nonfat milk
1/2 teaspoon vanilla extract
1/4 cup part-skim ricotta cheese
8 slices of whole-wheat sandwich bread, crusts removed
1 (8-ounce) container strawberries, hulled and sliced
4 teaspoons bittersweet chocolate chips
Cooking spray
2 teaspoons confectioners' sugar
In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".
Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.
Transfer to serving places. Top with remaining strawberries and sprinkle with confectioners' sugar.

YUM! I am so saving this recipe....this reminds me of brunch! I love brunch! lol....I'm gonna try it maybe tomorrow thanks!
I wonder if you could use egg whites or beaters? but omg this really sounds good and easy! (but I'l pretend it was soooo hard to do when I give it to hubby LOL)

It's only to soak the bread in.
I was drooling as I was watching Ellie make this on her show today.
It looked soooo good.
I'd have to wait until this week to make this b/c I'm all out of strawberries.

This sounds good and all, but the ricotta cheese I'm not sure of. Let me know if anyone taste it. I want to make it Sunday. I'm not going to if it doesn't taste good.0

I've tried them SO SO SO good. THey're kind of messy to make, make sure you really pinch the bread together or some of the choco chips might fall out in the egg bath. Also, you might get away better using eggbeaters, as we followed the directions and they tasted a bit "eggy" ... I'd say 2 eggs in stead of 3. all in all, though, they tasted really really good.0

I'm so glad someone liked this recipe.
I'm not a fan of ricotta cheese so I left that out... so I basically had french toast w/ strawberries & chocolate:laugh: but oh so yummy!
I used egg beaters and the bread sucked up a whole lot of it so becareful as to how long you dip the bread in the egg.

I made this last night for dinner and everyone loved it.
I wasnt too fond of the ricotta myself, so I'll probably use fat free cream cheese next time. I also used eggbeaters instead this time... YUM!!
My youngest daughter said this would be good with bananas and nuttella spread instead of the strawberries and chocolate, altho I dunno how that would change the cal content.
Would make a good sweetheart breakfast for valentines day0
