My corn salad- YUM!!

Hey guys!! So I took inspiration from a few recipes and threw together my own delicious corn salad the other night....It is all veggy but VERY fresh and tasty and filling and only 153 calories per serving! After a couple requests I decided to post the recipe. It's very easy, fast, and you just need a few items. I made 2 servings but increased it in case you guys want to make a larger amount for your family etc.

LT's Corn Salad
(4 servings)

Corn- 2 cups
Black olives- 20
Tomato- 1 tomato
Avocado- 1 avocado
Light Sour Cream- 2 tbsp

Cut 20 olives into halves or quarters. Dice tomato into small chunks. Slice and cube avocado. Pour all of these ingredients along with the corn into a medium size bowl. Add 2 tbsp of light sour cream to mix and stir until mixed thoroughly. And you're done!
If you'd like you can add salt, pepper, and/or hot sauce to give it a bit more flavor and kick (this would change the calorie count though), although I love it as is.

Calories- 153 per serving
Fat- 7g per serving

    Sounds good to me! Do you just eat it plain like that? Sounds like a good mixture to dip some corn chips in! :bigsmile:
