I really really want a cupcake right now but know that I cant what can I do instead to get that texture, taste and creamy icing?!?! AUGH STUCK IN A RUT HELP!!!

    Go grab a big glass of water, chug it, then sit your rear end back down here at this computer, and POST LIKE THE WIND FOR THE NEXT 20 MINUTES!!     Have you tried the diet coke cake recipe? in cupcakes! using fat free, sugar free pudding instead of frosting, you save over 100 calories! less than 200 calories each !

    One box of cake mix ( you pick the flavor)

    one can of diet soda,,, (coke for chocolate) (diet 7 up for white, lemon etc.)

    Mix together, no eggs, no milk, no oil,

    Follow the baking time for your cake mix box, 12 cupcakes to a box.

    Plain they are 170 calories

    top with Fat free, sugar free pudding instead of frosting, about 1 tablespoon that will be anywhere from 10 to 20 calories depending on the brand. you cant tell the difference in the cake, moist fluffy and a small treat, if you budget your calories right you can even have cake!

    If you are a scardey cat about the recipe, add two egg whites only which changes the calorie count by just 3 calories each cup cake, I swear it works, and it is so good others wont know it is "diet" cake.

    Thank you so much Ill have to give that a try bc I LOVE cake and so does my BF he does more than I do. LOL I dont think Ill tell him and see if he can tell the difference. Thanks again

    The first time I tried it I did it to prove how whacky the site was and that it would not work, my husband ate half of the first one not knowing it, even scolded me about eating it because he knows I am losing weight with a passion. I made my first one in a bundt pan, melted 1/4 cup of chocolate chips and 1 tsp. of butter in the microwave. stirred while it was hot and used it as a drizzle topping for the bundt cake it was pretty and tasted fabulous at 195 calories a slice, 12 portions to the bundt cake. I used a double chocolate cake mix in that one.

    You do not have to suffer, or feel deprived! changing how you cook, changing little things that you can really live with makes you feel "normal" I have lost 18 pounds in 2 months, the only big difference I see is portions and thinking first before I dive in. Planning is the biggest difference for me. and being conscious of better choices, not flavorless prepacked "Diet food"

    cupcakes are my crack so i feel your pain!!!! betty crocker (or maybe it's pillsbury) makes a reduced sugar mix...i buy that and instead of oil, i add apple sauce, and in place of eggs i do the beaters....i don't know what the exact stats are on the final result but they are obviously WAY healthier than a goody from the bakery....i have also done the diet soda + mix and it's is heavenly, but it sticks horribly to the pan or cupcake liner and i was finding myself chewing on the pan to get every last scrap! :laugh:

    I used a healthy spraying of Pam to keep it from sticking, didn't have that problem. forgot to say spray, spray!:drinker: :drinker:
    For the cupcakes I use the foil liners not the paper and spray a bit in each one.
