The Hungry Girl website has a ton of food swap recipes - you may find something there?

    Try "oven frying".

Dip wings in egg whites mixed with reduced sodium soy sauce, then in bread crumbs with a bit of ground ginger mixed in. Place in an olive oil coated pan and bake. I'm not sure how healthy it is, but it is healthier than how i used to make fried chicken.

I like Shake n' Bake for "fried chicken". Another thing I have done to make fried chicken is coating the chicken in egg substitute or egg whites and then dipping it into corn flakes. It gives it an amazing crunch. You can also try panko bread crumbs for dipping as well.
