Holiday leftovers????

I need healthy recipe/meal ideas for left over spiral cut ham and roast turkey.

I have the turkey carcass in the freezer to make soup later but would love some ideas for casseroles or one "dish" concoctions to feed us this week.

I have quite a bit of sliced ham too.

    hiya.. i normally have turkey as is with different veggie sides after the holidays.. but for that ham healthiest thing i can think of is omelettes! sautee some veggies and warm up the ham in a pan and toss in your egg and voila you've got a one pan meal in minutes.. im a sucker for breakfast at supper though.. hopefully others pick this one up!

    I cut the meat off the ham bone, then I filled my largest pot with water and but the bone in. I added a few bay leaves, brought the pot to a boil, turned it down and covered it. I let it simmer about 5 hours on med-low heat. Pulled the bone out and left all meat that fell off bone in it. When it cooled I put it in the fridge and skimmed the fat off the top of the stock. Today I plan to add random veggies (corn, carrots, potatoes, celery, and who knows what else, maybe some noodles). I think it will make a great soup, but we will see.

    I make turkey burritos, heat turkey in skillet add a can of black beans, corn, and cilantro with taco seasoning, put it in tortilla with salsa and low fat sr cream or on lettuce with salsa and avocado......YUM also you can make ham and split pea soup or a ham and bean soup, or a ham stir fry or ham, and egg on english muffins....
