I'm trying to figure out what I can add to my diet and not feel afraid of. I am having a hard time thinking outside of my box though

    I saw someone posted earlier that she fries up lean ground beef or chicken. Sautes the meat with onions, garlic, diced tomatoes and any vegetable on hand. Cook that for 1 hr. Mix that with a carbohydrate, like, noodles, rice or potatoes. I am going to try this myself. Sounds good.

    This might not really be thinking outside the box, but I like to cook up chicken breast, turkey breast, or pork roast and keep it in my fridge to snack on whenever I get hungry. I have a little scale on my table at all times and just weigh out a few ounces whenever I'm hungry.

    I add salsa to a lot of things and I also eat it without chips or anything else substituting as a salad. So flavorful:-)
  • Tzatziki! Basically, plain Greek yogurt with lemon juice, garlic, and cucumber. It can be used as a spread, dip, sauce, etc. There are a ton of easy recipes for it online and it is SO GOOD. I love it with grilled chicken or shrimp and some sliced onion, lettuce, and tomato in a pita or a wrappy thing.

    Also, if you staute some onions and mushrooms, stir in a Laughing Cow Herb and Garlic wedge and some low sodium chicken/veg broth, it makes a killer "fake" alfredo sauce. I like to eat it with shrimps or chicken and some steamed green beans or broccoli. I think I have a recipe for this too if you'd like.

    Equally delicious, take 1/4lb ground beef, divide it in half and form it in two patties. Make a little well indent in one patty and stick 1 tbsp of feta cheese inside and seal the patties together. Cook it up and stick it in 1/2 a pita with some diced onion and tomato.

    I'm sure I can think of some sweet things too.. good luck!

    I'm assuming you mean more like snacks here, but it depends what type of food you're having trouble getting enough of. If you're very balanced then pick any of these options.

    If protein - just some sliced meat is good, stuff like string cheese, turkey jerky or lowfat beef jerky (or any jerky) is good. tuna fish is awesome, I do mine with mustard or lemon pepper and a little miracle whip and put it on wasa crackers or bread. Eggs cooked however you like are good too.

    If carbs - I like the reduced fat wheat thins as a quick carby-salty snack. Also just a slice of bread with jam or even plain fruit. I usually do some hummus on my wheat thins.

    If fat - nuts of any kind (also has the benefit of a bit more protein than most fat), avocado, avocado on toast if I've got carbs left over too.


    I know you said low fat but assuming you are cutting out a lot of fat from your diet already -you need to eat SOME healthy fats at least - its not a bad thing to cut out trans and saturated fats (although I don't bother) and it helps keep calories low but you need to replace at least some of it with 'good' fats. Avocado is nice because it adds fiber, nuts are nice becasue they add protein.

    This, too. Pico is VERY tasty and versatile, but very low cal.

    My MIL and I have become addicted to Pomegranate arils. You can usually watch sales for Safeway and for $4 you can buy one get one free. 4.3 oz cup of them is 100 calories - and low in carbs too. I usually put them into tiny containers that hold 2 TBS each - it's a nice crunch, sour and satisfying snack.

    I like to make Tzatziki and Hummus. I usually eat both with pita chips, but you can save a lot of calories if you dip veggies or something.

    I eat A LOT of black beans. They make soup, chili, burgers, tacos....even brownies.


    They are my very favorite protein/carb source.
