I use Steel cut oats. I make 4 cups at one time and eat it throughout the week.
Bring 4 cups of water to a boil. Add 1 cup Steel cut oats and reduce heat to simmer. Simmer for approx 20-30 min, or until oats are a thick consistency, stirring occassionally to keep oats for burning. Remove from heat, stir in 1/2 cup of milk, 1 tsp of cinnamon, 1 tsp of vanilla. Store in fridge.
I add a tsp of sugar and 1/8 cp of raisins to each serving that I prepare.

I really don't like oatmeal so I sneak mine in as a "cookie" as part of my breakfast:

Chewy Low Fat Dark Chocolate Chip Oatmeal Cookies

    Ingredients
    2 1/2 C of quick cooking oatmeal
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
Cinnamon (as much or little as you like)
2 TBS of light butter (room temp)
10 (or more) packets of Stevia in the Raw
    1 egg
    1/4 C mashed ripe banana
    1/2 C natural unsweetened applesauce
    1 tsp vanilla extract
    1/2 C dark chocolate chips

    Directions
    1. Preheat oven to 350 degrees.
    2. In a bowl mix together oatmeal, baking powder, baking soda, salt and cinnamon.
    3. In mixer cream together light butter and Stevia.
    4. Once light butter and Stevia are mixed together add egg, mashed banana, applesauce, and vanilla extract.
    5. After all wet ingredients are mixed together add the oatmeal mixture and mix well.
    6. Add dark chocolate chips to mixtures and stir by hand.
    7. Divide cookies into 12 even dollops on cookie sheet.
    8. Bake for 15 - 20min. Do NOT over bake! Cookies should be chewy!

    Makes 12 Cookies. For 1 Cookie: 117 Calories 15 Carbs 5g Fat 3g Protein 2g Fiber 2g Sugar

I always cook my oatmeal on the stove, none of the instant stuff for me! I like it really, really thick. I use 3/4 cup of water, 1/2 cup of quick cooking oatmeal, pinch of salt and a dash of cinnamon, I use quite a bit because I love cinnamon. When it is cooked I sprinkle the splenda brown sugar over it and and a tbsp of dark chocolate chips and about 1/2 cup of milk. I don't mix it, I just eat it with a little of everything on each spoon. It is like eating a oatmeal chocolate chip cookie! I love it!

Now I am hungry, I might have to go make some!
  • Some great ideas here... will save for later :-)

    Thanks
