Who Has Time?! Dinners in a Crunch!

So, seeing as though it is the holiday season...most people are usually out and about running around, getting things ready, or visiting with friends and family (I know I am!). So, here are a few recipes I have been relying on during this busy time (so, far, they all have proved to be super tasty!)

Tuna-Noodle Casserole (I LOVE this because I always have all the ingredients on hand and it's so easy! just throw everything together and put it in the oven and you have a comfort-classic in no time!)

1 can of tunafish (6 ounces)
1 cup of raw macaroni (I used a whole wheat macaroni)
1 onion chopped (I used onion powder since I was in a hurry and still tasted lovely!)
1 1/2 cups of frozen peas (thawed under running water)
1 can of 98% fat free cream of mushroom soup (10 3/4 ounce can)
1 cup of skim milk
1/2 cup of low-fat cheddar cheese shredded

1. preheat oven to 350
2. thaw peas under cold water and dry
3. Mix tuna, peas, macaroni, cream of mushroom soup, onion (or onion powder), and skim milk together in large bowl
4. spray 8x8 pan and put mixture in pan
5. sprinkle cheddar cheese on top
6. bake 50-60 minutes in oven covered

Scalloped Potatoes and Ham (more comfort food!)

4 1/2 pounds of red skinned potatoes cut into 1/4 slices (I keep the skins on)
1 container of fat free sour cream
1 1/2 cups of low fat or fat free shredded cheddar cheese
1/2 lb of cooked diced ham
4 green onions chopped
1/4 cup parmesan cheese

1. preheat oven to 350
2. cook potatoes in boiling water until just tender. when potatoes are done, remove 3/4 of potatoes.
3. add sour cream to the 3/4 removed potatoes and mash. then add green onions, ham, and cheese.
4. carefully fold in the rest of the potatoes with the mixture
5. place mixture in baking pan and top with parmesan cheese
6. bake for 30 minutes

Serves 12-16 (approx. 1 cup per serving)

Ham and Cheese Soup (Crockpot)

2 cups of cubed red potatoes (I keep skins on)
3 tbs butter (i use light butter)
1/4 cup of all purpose white flour
3 cups skim milk
1 1/2 cups of reduced fat cheddar cheese
1/2 pound of diced cooked ham

Add all ingredients together *Except Cheese!* in crockpot. Cook on low 4-6 hours
Add cheese during the last 20 minutes of cooking. Serve once cheese has melted

Makes about 5 servings
