Low Fat Chicken Philly

1 onion, sliced
1 bell pepper, sliced
fresh mushrooms, sliced
fat free swiss cheese
Pita pocket bread, whole wheat
garlic powder
Lawry's seasoning salt
pepper
low sodium salt
oregano
fat free low sodium chicken broth
1 pound of boneless skinless chicken breasts

Start with 2 skillets, lightly sprayed with canola oil cooking spray. Add onions, bell peppers, and mushrooms to one skillet and begin cooking on medium heat. Sprinkle with low sodium salt, pepper, and oregano. When veggies start to stick a little, pour chicken broth over to keeping them from sticking. Repeat as many times as necessary. Cook until tender.
Butterfly chicken and place in other skillet over medium heat. Sprinkle chicken with lawrys seasoning salt, pepper, and garlic powder. Cook until the chicken is not pink. Use the same method as the veggies with the chicken broth. Once chicken is done, begin pulling chicken apart with knife and fork or spatula. Add veggies in. Heat pita pockets 10 seconds in microwave. Place fat free swiss cheese inside and stuff with chicken and veggie mixture!
