Sweet potato recipes for 600 calories or under?

Hey all I just bought some sweet potatoes hearing that they are better for you then normal ones?


Just want some low cal recipes for them?

    My mom made a sweet potato thing for Thanksgiving that was low-cal and to die for. I think she got the recipe online. It had apple wedges, sweet potatoes, and I think some nutrasweet, but it was SO yummy.

    cut a sweet potato into a 1 inch fillet.
    Microwave for about 4 mins to soften a little.
    Coat the potato both sides with chili powder.
    Place on a grill or foreman till both sides are dark and you can easily put a fork through.
    Add 2 strips bacon, 1/4 avocado and pepperjack cheese.
    Serve with a dollop of plain greek yogurt.

    Spicy yum yums!

    Just boil like regular potatoes.
    Or- slice, and roast in the oven until crispy (spray with pam or light oil.)

    I don't like my sweet potatoes sweet, so no caramel, nutrasweet, honey etc etc.

    1. Prick a whole SP, zap in the microwave for 6-8 minutes until soft. Scoop out the flesh and mash with black pepper and olive oil. Serve with grilled meats or poached chicken.

    2. Cut into wedges, toss in alittle oil, season well, and bake for 30-40 minutes. Great with steak!

    3. Peel and cut into large cubes. Mix with some other root veg (carrots, parsnips, squash), tuck in a few sprigs of rosemary or thyme, and roast in the oven for 45 mins. Add some cubes of haloumi about 15 mins before the nd of cooking.

    PS they have some extra nutrients that ordinary potaotes don't, but they're not THAT much better in terms of calories, carbs etc.

    I toss my peeled and diced sweet potatoes with a little olive oil and cajun seasoning and bake...I LOVE them. I ,too, prefer a savory versus sweet version of the sweet potatoes. There are some soups that are pretty good. Allrecipes.com is a good site.
