Turkey Vegetable Soup is healthy and can use up all of it, plus gets you a lot of veggies used. It can also be frozen too so homemade soup whenever you want!
You could also do a healthy turkey chili, which is a fave of mine.
Turkey hash is good too, served with some veggies and salad.0 -
You can shred it and use it just as you would chicken

I make turkey and cheese omelets (egg beaters), turkey salad for sandwiches and turkey soup (you can use chicken stock).0

You can make crispy 'Duck' pancakes with salad & dipping sauce.
This works especially well if you have brown meat leftovers- but also worked with shredded breast meat. Simply toss the shredded meat in olive oil and a couple of teaspoons of chinese 5 spice powder and sautee on a high heat until it starts to go crispy.
Remove and serve in lettuce wraps, or chinese/vietnamese pancakes with shredded carrot, cucumber and spring onions (scallions/green onions) and an oriental dipping sauce (plum sauce/ hoi sin/ nuoc cham/ sweet chilli/ soy & ginger).0 -
