  • Hello-
I am vegetarian and also have one kidney so I have to eat a pretty strict diet. Yogurt has a lot of protein in it. Morning Star Blackbean Burgers are good sources of proteins...Beans...Cheeses (stick with low fat). I eat low sodium, High carb, and about 50g of protein per day...I also eat a ton of veggies and fruits. My calorie intake stays around 1260 per day. Perhaps a vegetarian cookbook will help with some quick food idea's and should also give you the nutritional value that you are looking for. Hope it helps.
  • hi there, thanks a lot. I will try that but I am trying to stay away from dairy too (love cheese, hate yogurt, extremely difficult person). Also I live in the Uk so I'll need to find an equivalent to the bean burger. Does it never seem difficult? maybe its just me :-/

I always go over mine too. I had rice and beans for lunch today and black bean burgers for dinner. Yesterday I had Moroccan lentil soup and mini veggie burgers. You need to try to incorporate more pulses, tofu etc - Sainsbury's do lovely bean burgers of their own brand or made by Goodlife, who also do amazing nut cutlets. happy to share the black bean burger recipe and my diary too if you'd like to add me. Oh also quinoa is really high in protein and you can buy pouches of it precooked now too.
