Pepper and Onion Bruschetta with Melted Cheese

I was going to a party and wanted to being an appetizer. I looked at online recipes for Bruschetta, got the idea and made my own variation. I've done this a few times and it keeps getting better.

Italian Bread
Olive Oil
2 Bell peppers
1 Onion
1 heaping teaspoon minced garlic
Balsamic Vinaigrette
Shredded Mozzarella Cheese

1) Preheat oven to 450 degrees
2) Slice Italian bread. Place on cookie or baking sheet. Drizzle a small amount of olive oil on each slice. Turn bread over, olive oil side down, place in oven for 5 minutes.
3) Chop onion and peppers. Sautee onion and peppers in olive oil over medium heat, until caramelized. Add a tablespoon of Balsamic Vinaigrette and garlic to the mixture 2 - 3 minutes before removing from heat.
4) Drizzle olive oil on the bread slices again, and flip, so that they are now toasted side up.
5) Spoon veggie mixture over bread, then top with shredded cheese. Place back in oven for 5 more minutes
