My first ever recipe with quinoa - vegan and delicious!

Mary’s vegan jambalaya

Makes 3 generous servings. Can be served hot or cold. 400 cals and 4g fat per serving.

INGREDIENTS
1.5 cups quinoa
2 cups frozen mixed veg
1 can chick peas (240g drained)
1 large sweet potato (260g raw weight)
Fry light spray
Aromat savoury seasoning

Method

Cut the sweet potato into cubes (leave the skin on)and place onto a baking tray. Spray with fry light oil and bake in the oven for approx.30 minutes or until skins start to brown.
Meanwhile, measure 1 and a half cups of dry quinoa into a pan and add 3 cups of water. Bring to the boil and simmer for approx. 10 minutes. The grains are ready when they have expanded but still retain a slight crunch.
Boil the mixed vegetables and drain the chickpeas, then mix everything together in a bowl. Season with aromat or similar savoury seasoning.

    I think I am going to have to make this tonight for dinner......I am always looking for new vegan recipies and I happen to have all those ingredients in the house right now so I am so doing this!!

    This sounds good. I got all keen and bought some quinoa a coup;e of weeks back, but couldn't think what to do so did nothing. I'll try this, tho I may skip the sweet potato as I try to avoid potato at the moment.
