Vegetarian Recipes?

Anyone have any suggestions for a site for some relatively simple vegetarian recipes? I want to add a few vegetarian meals to my diet but I don't want to have to go out and restock my pantry with all new staples for a couple of meals a week. I've seen people suggest sites in other threads but I can't find any of them right now. Thanks in advance!

    I make sweets/biscuits for my 3 vegan friends and will get the recipe for you. In Australia the products might have different names thats all.

    Vegan, choc chip rice bubble cookies...

    You will need:
    125g Nuttelex margarine
    1/2 cup castor sugar
    1 cup self raising flour
    2 tsp Egg Like/Egg Replacer/No Egg
    1/2 cup dark chocolate chips & 2 cups rice bubbles
    Method:
    1 Beat the castor sugar and margarine until smooth.
    2 Add the Egg Like and flour and mix well.
    3 Add the choc chips and mix in.
    4 Scoop up a teaspoon full of mixture and roll into a ball then roll in the rice bubbles
    and place on a baking tray, flattening with a fork slightly.
    5 Bake in a moderate oven for 15 minutes only. If they don't quite look done, don't
    panic they will firm up a little whilst cooling.

    Victoria is another state in Australia. Prob helps more so for ones in your locality for the product names! lol. I find that hard with american recipies. just had to refer this one has I have made it twice and varied the ingredients to make one batch of basic mix and 6 different flavoured cookies like choc chip, peanut, coconut, jam drops etc. I know this one works!

    cheers and can ask my friends about main meals as I know they do a lot of cooking both of them but are complete vegans, nothing from animals what so ever. I love meat and my vegetarian dishes are consisting of 'salad'. Could do with the meat break I am sure!

    crispy vegetable patties

    take all kind of vegetables you like and cut them in small slices, put them together in a bowl, add some flour, salt, pepper and 1 egg. mix everything through, if you like add some parmesan cheese (that will add some calories to it).

    I don't use oil or anything usually, but if you don't mind using it the pad will get crispier. The flour and egg will hold it together. In the original recipe they add some ajvar.

    now put some of it in the pan (2-3 tablespoons), turn it around after maybe 2-3 minutes...voila...done :)

    I usually use:
    carrotts, mushrooms, tomatos (without all the "inside" sorry I don't know how it is called in english), zucchini

    Agreed! I also order the magazine & have got their iPad app. Simple and healthy recipes that usually don't require a whole lot of ingredients.

    I find a really great way to find veg recipes is to think of something I want to eat and google it. I've found some great recipes that way.

    Also, a really easy veg meal is to make marinara sauce with shredded tofu (use a cheese grater) instead of meat and just have a serving of whole wheat pasta with a veggie on the side (roasted asparagus goes great with pasta). Very filling.
