Cream Cheese + Veggie Sandwich

My mom made me a sandwich similar to this years ago. I ran across this recipe from a blog. I haven't worked up the calorie count but it can't be that bad.

**I think I will get a yummy bread and possibly the "Garden Vegetable" Philly Cream Cheese!

Recipe: Cream Cheese + Veggie Sandwich

(serves one)

2 slices bread
Cream cheese or Toufutti Better Than Cream Cheese
Cucumber, thinly sliced
Tomato, sliced
1/2 small red onion, thinly sliced
Mixed lettuce
Alfalfa sprouts
Sunflower seeds, small handful

1.) Spread a generous layer of cream cheese on each slice
of bread.
2.) Place the cucumber slices on the bottom slice of bread, followed by the lettuce, tomato, red onion, and sprouts.
3.) Sprinkle the sunflower seeds on top of the cream cheese on the other slice of bread.
4.) Close the sandwich, & viola, you're done!

*Optional: sprinkle some fresh herbs, like dill, on top of the cream cheese; you may also toast the bread, if you wish

    A veggie cream cheese and olive sandwich is heaven! :love:

    I eat veggie cream cheese on wasa crackers too. Might go grab one momentarily...

    Sounds good! You could replace the cream cheese with fage yogurt which has very few calories, thanks!

    I bought veggie cream cheese today.........................with this sandwich in mind for tomorrow's lunch!

    I made this for lunch today.
    I added some grated carrots and avocado! YUMMY!!!

    I make this all the time after having it at a teahouse back in the day : )

    I use a whole wheat bagel instead of bread - the sunflower seeds. My favorite!
