looking for oatmeal recipes

Looking for ways to change up my oatmeal!

    I put:
    - 2-3 teaspoons of brown sugar in it, bananas, and raisins.
    or
    - Dice an apple and put a little bit of water in a bowl (VERY little). Season the apples with Cinnamon, Nutmeg, etc. Microwave apples for 2-3 minutes until tender. Then put the apples in the oatmeal with 2-3 teaspoons of brown sugar.
    or
    - Put Libby's 100% Canned pumpkin in it with cinnamon, nutmeg, and 2-3 teaspoons of brown sugar.

    Try these. There was a muffin you can make in the microwave with an egg, berries and oatmeal that I really need to try. It sounds great!

    1)cut up apple, add raisins and dried cranberries with a little bit of brown sugar or maple syrup
    2) honey
    3)cinnamon with a dash of sugar

    My fav is number 1 reminds me of Mcdonalds oatmeal and that stuff is amazing!!!

    I cook my oatmeal until almost done and then add walnuts and bananas, apples, pears and top it with cinnamon.

    I make mine with fat free milk instead of water, add honey and cinnamon and sometimes chop up and apple and throw it in when I am cooking it!

    look on line for "amish" or baked oatmeal recipes. I cut the brown sugar and butter (or oil) to a minimum. I make a big batch once a week and re-heat it in the micro. I switch up the add-ins...nuts, dried fruit, chocolate chips, coconut, etc. SOOOOOO good!

    I LOVE my oatmeal! I use 1/4 cup quick oats, 1/2 Almond Breeze Unsweeted Vanilla Almond Milk, 1 tsp brown sugar or Agave, 1/2 table spoon natural peanut butter! I microwave it for 1:30. I hope you like it!

    oh yeah, I forgot. I also put a spoon of coconut oil in my regular oatmeal. You can get it at Whole Foods or Trader Joes. It is so good for you and your metabolism. Skin too.

    diced apples + cinnamon + vanilla extract + chopped walnuts or almonds
    dried cherries + walnuts
    dried blueberries (or frozen) + almonds
    unsweetened chocolate powder + chopped almonds + vanilla extract + agave nectar
    apples + dried cranberries + almonds

    I always make it with almond milk or regular milk unless I am out.

    Also a nice addition to make your oatmeal more hearty: almond meal (it is basically ground almonds).

    I eat mine plain every day with 15 raspberries and a big huge dash of cinnamon in it. I use the raspberries as a natural sweetener.

    I use 1/4 c. dry one min. oats
    1/4 c. frozen blueberries or frozen strawberries
    1/2 c. skim, milk
    1/2 c. water
    sprinkle of splenda

    I have a pancreas issue, so have recently learned ways to cut out sugar. It might sound bland but I cook my oatmeal, stir in 1tsp of cinnamon and a splash of vanilla almond milk. Very yummy and only about 180 calories.
  • I like steel-cut (Irish or Scottish) oats instead of rolled/instant oatmeal. It's sort of like breakfast risotto! It takes about 45 minutes to make 1 serving or 5-6 servings, so I do the following recipe and put the extra in 1 cup containers in the fridge. Two minutes in the microwave and a little more "Saigon" cinnamon and breakfast is served on the other 4-5 days. Numbers in () are for a little larger initial batch.

    Original recipe on Good Eats (Alton Brown) on the Food Network.

    Saute 1 (1 1/3) cup of steel cut (pinhead) oats in 1 (1½) Tbsp. of butter. Keep moving every now and then.

    3 (4) cups boiling water (AB recommends electric kettle for speed and efficiency)

    When oats smell nutty, add water AND ¼ c. dried fruit. Turn down heat to a simmer and stir. NO salt yet. After reaching a good simmer (about 2 on my left front burner), cover and leave for 30 (35) minutes.

    ½ c whole milk
    ½ c, buttermilk (whole or low-fat)

    Mix milks together before adding to porridge to prevent curdling. Add ½ t. salt and milk

    Fold (with fat handle of a spoon to prevent breaking down oat structure) until right consistency.

    Add cinnamon (Zeylanicum tree, not cassia) or a good Vietnamese cinnamon works for me.

    I find that I can skip the milks part. Just fold in ¾ - 1 c (¼ c is cooked with oats so it is really soft) of dried fruit and about 3 - 6-oz. containers of yogurt. It seems to keep in the fridge just fine for at least a week. One cup nukes in about 2 min or so.

    I've tried most of the fruit add ins above, nuts, peanut butter, but the other day I was out of fruits I usu,ally add so I drained one of those single servings cups of diced peaches and added that to my oatmeal. It was really tasty. Reminded me off the flavored peaches and cream oatmeal but I used Nature's Promise Organic Steel Cut Oatmeal. (slow cook) and Dole peaches. I use Stevia if I need extra sweetness.

    I add frozen mixed berries and 1/4 to 1/2 cup of vanilla soy milk (light). I toss the frozen berries in right when the oatmeal comes out of the microwave. The heat thaws the berries and the cold cools the oatmeal so I can eat it right away.
