slow cooker creamy vegetable soup

Here is what I am having for dinner.....its a creamy vegetable soup that is cooked in a slow cooker (crock pot)
I love recipies that can be easily changed or that you can add or omit ingredients to suit your own tastes.

Here is what I put in mine:
6 cloves garlic
1.25 cups of onion
1/3 bag of creamer pototoes
2 cups zuchinni
9 oz of baby carrots
1 cup broccoli
1 28oz can no salt added diced tomatoes
I can of light coconut milk
2 tbls coriander
1 tsp cumin
2 tsp lemon juice

**The recipe says you can add chilis or grated ginger to taste as well as salt and pepper or strands of lemon grass
- You can use sweet potato or squash or any potatoes
- Add red peppers if you have them or other veggies (great for using up those random veggies in your crisper before they go bad)
- I was going to possibly add some noodles to mine later (you know those tiny little rice size pasta that come in cute little shapes......my package says they are called soup noodles) but I want to see how runny or thick the soup becomes before adding anything more.
- Also you have the option to blend or not blend the soup, so if you prefer a smooth soup pop into a blender before serving to desired texture, if you prefer a chunky soup leave as is.
- I also think that if you wanted this to be more of a stew or to add some extra heartyness, beans or lentils could be a nice addition.
-If you wanted a brothier soup or you add too much other stuff and it's too thick just add a bit of water and a veggie bouillon cube and you'd be back on the track to soup.

**I really think the possibilities with this recipe are endless!!!

Recipe says it serves 6 but I guess it all depends on what has been added but for mine it looks like it will be approx 8 (1 cup servings) but I won't know for sure till it's done so I will have to post later with the final nutritional information!

    I have really been craving a cream soup.....so when I saw this recipe called for tomatoes and coconut milk I was sold!!

    I can't wait to have some tonight!!

    okay so I decided not to add any noodles or other stuff other than a touch of splenda to compliment the other elements of the dish (this really helped to bring out the salt flavor even though there was barely any in there to begin with)....so the nutritional info for the way I made it was:

    9 servings total =1 cup (8oz)

    cal 192
    protein 5
    fiber 5
    sodium 45
    fat 3
    carbs 36
