Any Easy Couscous Recipes?

I have a brand new container that has been in my pantry for months and I haven't figured out what to do with it yet.

This is one of my favorites:bigsmile:
Spinach and Couscous with Feta Cheese
Ingredients:
1 12 ounce box couscous (about 1 1/2 cups)
2 1/4 cups chicken or vegetable broth
1 onion, chopped
1/2 pound mushrooms, sliced
1/2 tsp garlic, minced
1 tbsp lemon juice
1 tsp oregano
1 bunch fresh spinach
1/2 cup crumbled feta cheese
Preparation:
In a saucepan, combine the couscous and broth and cook as directed.
In a separate skillet, sautee the onion, mushrooms and garlic until tender. Stir in the lemon juice and oregano. Add spinach, cooking only until wilted.
Toss the cooked couscous with the spinach mixture, and sprinkle with feta cheese.0 -

mix in frozen mixed veggies
cook in stock, add chopped or sliced nuts
for a sweeter bite try adding in dried fruit (raisins, cranberries)0 -
Open box, mix with boiling water.....YUMMY :laugh:
