Ideas for eggplant?

I ended up buying an eggplant at the store this evening, but now I don't really know what to do with it. I know I can brush a little olive oil on it and toss it in the oven for a bit with some salt and pepper, but will it taste fine just like that? I would like to keep it a little on the healthier side, because Sunday is the day I go out for a meal.

Normally I will put that into a curry with zucchini, potato and chicken or prawns. It's really good, and pretty healthy of you make it without oil, etc.
Otherwise, I usually stir fry it with other veggies.

You can cube it into about 1 inch pieces and cook it in a skillet with some canned tomatoes, onion and green peppers. If you want a little more substance you can put it on pasta or throw in some lean meat. Beef, chicken or ground turkey. Season with some italian seasoning. Cook till eggplant softens. Sauté onions first and throw in a bit of fresh garlic too

cut it into cubes add zuchini,yellow squash,onions and tomatos,drizzel a little olive oil and sprinkle some salt bake at 350 until done...eat on its own or add more tomatos and serve on pasta, or add some chicken and cheese, or even add some broth and spiced and make a roast veggie soup!0

Mini eggplant pizzas are soooo good! Slice the eggplant bout 1/4 inch thick, brush both sides with olive oil and sprinkle with salt and pepper. Bake at 425 for 8 minutes, turning once. Top with pasta sauce and mozzarella cheese, then bake until cheese melts, 3-5 minutes. Yum!0

Grilled eggplant - slice the eggplant, marinate for 10 min, and grill.
Two marinates:
1. Balsamic vinegar, olive oil, minced garlic, herbs (thyme, oregano, etc), pinch of salt and pepper.
2. Soy sauce, brown sugars, minced garlic, grated ginger, minced chili or chili sauce.0 -
Slice the eggplant the long way. Bake them. Then create a lasagna usin the baked eggplant instead of pasta. Yummy0
