Is there such a thing as a healthy pot pie recipe? If so, any ideas?

The unhealthiest part is generally the crust. This recipe looks yummy and pretty healthy. It uses a biscuit type topping rather than a regular crust. Their biscuit has cheese (which would definitely up the fat/calorie count), but you could substitute a low fat whole (or partially whole) wheat biscuit topping for a healthier option. http://www.thecurvycarrot.com/2010/11/15/vegetarian-pot-pies/0

The definition of healthy is down to opinion.
But a pie has to have pastry
