Help with a dinner idea tonight.

I've got eggplant, a green pepper, and a red pepper in my fridge that need used.
I've also got brown rice, pasta, and shiritaki noodles. Most spices as well.
(oh, also a bag of spinach and a bag of lettuce that could be used up.)
I am a vegan, so this means no cheeses, eggs, and so on.
Throw at me your best ideas on how to use up those three yummy veggies.

I'd roast the eggplant, chop that up and mix it with the brown rice and a homemade tomato sauce and if you could get your hands on it some crumbled tempeh or the like and make some stuffed peppers! That'd be perfect with a green salad on the side with the spinach and the lettuce0

I would do like a ratatouille sort of thing with brown rice! Roast the eggplant for like 15-20 mins, then chuck in the peppers and some chopped tomatoes and fresh tomatoes and put in the oven for about 20 minutes! super healthy and really tasty AND warming for winter!0
