What the heck to do with eggplant?

For some reason I bought an eggplant at my last grocery trip. Why? I have no idea. I've never had them before, hadn't even heard of them before! But I bought it & want to use it before it goes bad but I have no idea. Suggestions?

I had eggplant with dinner tonight! Tossed thin slices of mine in balsamic, sprayed it with olive oil cooking spray, and grilled till soft (7-10 minutes). Served with grilled sea bass. YUM!

Eggplants are delicius! You can put them in a stew with tomatoes, onions garlic and olive oil (http://www.squidoo.com/how-to-make-georgian-eggplant), or you could just roast them in the oven with a little olive oil.

What the heck to do with eggplant?
