Bacon Baskets
Low calorie days suck...
BACON makes it better and Eggs have protein..
So:
BACON BASKETS:
1. Cook up some bacon (don't make it crispy)
2. Spray pan and add bacon
I experimented with putting a piece on the bottom and without -- both worked well.
3. Add Cheese and Eggs (Whole or whites depending upon your macros)
Bake on 350, remove. Use a knife to edge out reside stuck to pan. Enjoy
Not sure about the time
Adding cheese to the middle layer was a nice touch and sprinkling with a bit of spice made it well.. fantastic!!
The egg white only version worked out well and tasted nice.
I think that this is a keeper and I will tweak it a bit more..

Question: I can't stand soft bacon, I need mine on the borderline of burnt. So since I am keeping it flexible to shape to the cups, does it crisp up more while in the oven?0

Yes, it will crisp up in the oven -- but it will not be super crispy.
You can cook it a bit longer but make sure there's some flexibility to make the oval shape.0 -

I make these with ham instead of bacon, and use low-fat cottage cheese or ricotta They're amazing0

My mom used to do this with bread, stuffing the bread in and it forms a cup and cracking in egg in it.. she called it eggs in toast cups because the bread came out nice and toasty..... I bet it would be awesome to add the bacon just like you did, inside the toast cup.0
