Carrot Ginger Garlic Soup
Definitely making this dinner tonight.
Ingredients:
1 tbsp olive oil
1 cup diced onion
1 lb baby carrots, cut in half
4 cups water
4tsp minced garlic
3 tbsp minced ginger
1/2 tsp salt
pepper to taste
Directions:
1.Lightly saute onion in olive oil until translucent
2. Add Carrots, water, garlic, ginger, salt and pepper.
3. Simmer until carrots are very tender, approx. 15-20 minutes
4. Remove from heat and puree in batches in a blender until smooth.
5. Enjoy!

i don't see why not? It's always fun to experiment with foods.It was very good...I almost ate the whole batch btw...but I brought some for lunch today.

I love this soup!!! I've made a similar recipe before. I found if you add some sweet potato to it, its a bit creamier. Also, adding vegetable broth instead of water, or half water half broth increases the flavor a bit. One more trick I learned is to add some orange juice to it, but this adds sugar and calories. It works better with the juice with pulp. I only used about a quarter of a cup in a large pot and it does give the soup a slight tang. Enjoy!0
