Why not try an Asian beef salad? Marinate the beef pieces with soy, lime, ginger, a tiny bit of garlic maybe, some chili if you like it hot...then serve on a bed of salad drizzled with the pan juices....you could also add some brown rice if the salad isn't filling enough on it's own?

Depending on the cut, you may need to cook these long and slow. Stirfry or anything else which cooks it quickly is OK, but might result in tough meat. If labelled as stewing steak, it is probably a cheap cut (nothing wrong with this for slow cooking btw).0

Beef Stroganoff:
Quickly sautee the steak with sliced white onions, sliced bell peppers, garlic and mushrooms. Add a tbsp mustard and 2 tbsp of low fat creme fraiche (you can use cream or cream cheese instead) then add a pinch of paprika and plenty of black pepper.
Serve with rice, pasta or lots of veggies.0 -
Ooh yeah an asian noodle soup – get some fresh coriander, chilli, ginger, lime etc. add broth, noodles, steak and some veggies like sugar snap peas or something.0

you could make a stirfry out of it, fry the stake pieces and add a little bit of spices and add your veggies and then surver over noodles or rice0

If you want to do stir fry but don't want it to be tough, just cook it in your crock pot in some soy sauce for a few hours before dinner. That will help. Make sure to brown it first.0

For later - for those cheaper cuts of steak:
Beef Tips With Mushrooms
Beef, round steak, 1 lb
Onions, raw, 1 medium (2-1/2" dia)
Mushrooms, fresh, 2 cup, pieces or slices
Canola Oil, 2 tbsp
Water, tap, 4 cup (8 fl oz)
Salt, .5 tsp
Pepper, black, .25 tsp
Bouillon cube & Garlic
Put oil in dutch oven. Add beef, onion and mushrooms cook until beef is browned on all sides and onions and mushrooms are tender, about 10 minutes. Add S&P, bouillon cubes, garlic, water and simmer about 60 minutes. Longer you simmer, more tender the beef. For a nice low carb meal, eat as is. Or you can serve over rice or noodles. Makes about 6 servings.0 -
