  • THANK YOU for posting this. I'm going to try this sometime this weekend  I did have a question though, how many fries make a serving?

It depends on how thick or thin you cut them. The entire batch makes 4 servings, so just divide up into fourths. I made pinto bean burgers to accompany these, and the "fries" filled up about half the plate.

I made these last night and they turned out great! The whole family loved them! Thanks for sharing! Have you added your recipe to the food database? I've looked and found many many other varieties but not any that are close to the nutritional information you provided. Was just curious!

  • Um can i just say that you and your entire blog is AWESOME! i'm in DC too with far fetched considerations of moving to the Left Coast (not an option for me right now for a number of reasons but the biggest psycho-emotional barrier is that EVERYONE is so skinny over there. even my formerly curvy and/or pleasantly plump (not even fat!) friends who have moved back there for any period of time are so darn skinny!) anyway, keep the amazing fitness posts comin!
I have a weakness for real zucchini fries, so I decided to come up with my own healthy version of it. It comes out to only 92 calories per serving and tastes delicious! Even my friends who aren't watching their calories loved it!

    Here's the recipe: http://www.mywalletisfatnotme.com/2012/01/zucchini-fries-recipe.html

And here's a picture of the finished product. Hope you enjoy!

Just made them! But my dad didn't have bread crumbs so I toasted a couple slices of bread and crumbed them myself!
    They were yummy!
