    How many calories per serving is it for the chili? It might just be on tomorrow's dinner menu!!
    Mmmmm....this turkey chili with cornbread is NOT just for the weekend, but is a great weeknight meal because it is so easy and fast! I have even froze portions and it tastes amazing!

    For the turkey chili:
    1 1/2 tsp olive oil
    1 lb ground turkey
    1 onion, chopped
    2 cups of water
    1 (28 ounce) can canned crushed tomatoes
    1 (16 ounce) can canned kidney beans, drained, rinsed, mashed
    1 tbs minced garlic
    2 tbs chili powder
    1/2 tsp paprika
    1/2 tsp dried oregano
    1/2 tsp ground cayenne pepper
    1/2 tsp ground cumin
    1/2 tsp salt
    1/2 tsp ground black pepper

    1. Heat oil in pan. place turkey in the pot and cook until brown. stir in onion and cook until tender
    2. pour water, tomatoes, kidney beans and garlic in pan. mix. add in all seasonings. bring to boil, reduce heat, cover, and simmer for 30 minutes

    DONE!...the recipe says about 10 servings....it might be less if you eat more. It is really healthy and hearty! (I am not sure where this recipe came from because I got it from a friend!)

    Corn Bread
    1 cup yellow cornmeal (I used arrowhead)
    1/2 cup whole wheat flour
    1/2 cup all purpose flour
    1/4 cup of sugar (I used splenda)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 egg lightly beaten (I used egg substitute)
    1 1/4 cup low fat buttermilk
    2 tbs canola oil

    1. preheat oven to 350. spray an 8 inch square glass baking dish with cooking spray
    2. in large bowl, combine cornmeal, flours, baking powder, baking soda, and salt. in separate bowl, whisk egg, buttermilk, and oil. add wet mix to dry mix and stir until just moist. empty batter into glass dish and bake until lightly golden brown (about 25 minutes)

    Makes 16 squares. There are under 100 cal per square and are super delicious!!!
