I need some fat free recipes please

My husband is having some gallstone issues and until he has his gallbladder out on Tuesday, he needs to eat almost completely fat free or he is in ALOT of pain. We put a max of 4-5 grams of fat per meal but that seems to upset his stomach even with that amount. So far he has eaten chicken breast and broth over and over for like 4 our of 6 meals now and we really need some help.
I know of some snacks like jello, fat free pudding, fat free cottage cheese but I am having a super hard time with protein and side dishes. Please help. Thanks in advance.

    What about stirfries? I slice any vegies I like into strips. Choose your meat and cut into strips too. Then in a non stick frying pan or wok on a hot heat quickly "fry" the meat with a little stock (about 1tablespoon more if needed) until meat is cooked. Then I remove the meat from the pan and add veg and stock about1/4 cup and some seasoning like soy sauce, garlic, crushed ginger. once veg almost cooked I add meat back in to heat up. This should only take 15mins in total. I'd have it with a mini pita bread or on steamed rice or rice noodles.

    Hearty Vegetarian Lasagna (serves 6-8)

    8-10 lasagna noodles, cooked, drained & rinsed in cold water
    16 oz. fresh spinach, washed, stems removed; or subs. 2 boxes
    frozen leaf spinach, thawed
    2 cloves garlic, minced
    2 c. sliced fresh mushrooms
    1 c. grated carrot
    1 c. chopped onion
    1/2 c. pitted ripe olives, sliced*
    2-3 T. chopped fresh parsley
    few T. sauteing liquid
    1 8-oz. can tomato sauce
    1 6-oz. can tomato paste
    14-16 oz. crushed tomatoes
    1 tsp dried oregano
    1 tsp dried basil
    8 oz. LF/FF cottage cheese, mixed with
    8 oz. LF/FF ricotta cheese
    1-2 tsp grated lemon peel, added to cottage/ricotta cheese (optional)
    16 oz. grated LF/FF white cheese - monteray jack, mozzarella, or combo
    Parmesan cheese (FF) to sprinkle on top

    Preheat oven 375 deg. F. Cook spinach (if fresh) in small amt of liquid in
    large skillet until wilted; set aside. In skillet in sauteing liquid, cook
    garlic a few minutes, then add onions, carrots, mushrooms, basil, oregano
    and parsley; cook until tender. Add all tomato products and olives; cook
    over low heat till heated through (5-8 min.). Lightly oil 13x9x2 baking
    dish. Spread a tiny amt. of veggie sauce mixture on bottom, just to moisten
    noodles; then using half the ingredients, layer: noodles (edges slightly
    overlapping), cottage/ricotta cheese mixture, spinach (spread leaves out as
    much as possible), grated white cheese, and sauce. Repeat for second layer
    with other half of ingredients. Sprinkle top with grated parmesan. Bake for
    30-35 minutes (may need to put foil under to catch drips), remove from oven
    and allow to set for about 10 min. before serving. Freezes well.

    *adds 1 to 2 g. fat per serving, depending on serving size
  • There are several Fat Free Reciepies and that is where i got this one.

    STUFFED MUSHROOM (Serves one)

    1 large flat mushroom about 5 inches diameter (such as a portabello)
    1 red onion
    1 oz stale bread
    4 sun-dried tomatoes (the dried ones not the ones in oil)
    1 clove garlic, chopped
    dash soy sauce

    Use just enough boiling water to cover the sun-dried tomatoes and
    allow to soak for 10 minutes. Remove the mushroom stalk and chop
    finely. Chop the onion finely and then saute, along with the garlic
    and mushroom stalk, until soft in the tomato soaking liquid. You
    should have very little liquid left by the end of this. Add the
    finely chopped bread and a dash of soy sauce to make a firm stuffing.
    Fill the mushroom cap with the stuffing and put on a baking sheet in a
    ho= t oven until the top is brown and crisp.

    You could also sprinkle a little freshly grated Parmesan cheese on top if=

    you liked but it was fine without.

    Obviously the nutrition depends upon the size of mushroom used but mine
    came out to 204 calories and 1.9 grams of fat.

  • If you go on Rosemary Connely web site, she has a recipe section on her tv channel, she even has a chef demonstrating how to make the recipes. They are all very low fat as she advocates 5% or less fat. She has starters, mains and desserts. I have tried a few and they have been good. She also gives you the calories for each portion. Hope this helps X

    You can use beans and zero fat dairy products for protein. There are non-fat versions of milk, half and half, cream cheese, yoghurt, and various cheeses available. When you cook in a frying pan, use a non-stick pan with a bit of water or non-fat chicken stock rather than oil.

    If you google "fat free recipes", there are plenty of sites out there. If you want more generic techniques for cooking fat free, try googling "fat free cooking".

    I own two fat-free cookbooks by Sarah Schlesinger which I use and enjoy: "500 Fat Free Recipes" and "500 More Fat Free Recipes" (I like the first one better). If you have Amazon Prime you can get them overnight.

    My husband went through this last year - he was in agony too. Anyway, he couldn't eat any fat what so ever... he pretty much ate grilled chicken or steak and steamed veggies because dairy and anything other made him miserable.
