Made this tonight and it was soooo good!

Okay, I LOVE to cook and found these recipes on Pintrest so I put a little twist on them and this is what I came up with, may not be too good on calories but it was really good. Chicken Breast toppedwith bacon and Colby cheese and roasted parmesan potatoes.

2- 4oz boneless skinless chicken breast
1/2 cup shredded 2% milk colby jack cheese from block( I used Kraft, you can also use Mozzarella instead)
2 slices of bacon (i used walmart brand fully cooked bacon since it is low in calories and fat)
1 teaspoon chili powder
1 teaspoon poultry season
1 teaspoon garlic powder
cooking spray
baking dish

preheat oven to 375 degrees
spray baking dish and place chiken in dish sprinkle with seasonings and bake for 30 mins
remove and flip and top with bacon aand cheese
return to oven for 10 mins or until cheese is bubbly and melted

3 medium red potatoes
1 tablespoon of butter/magarine
1 teaspoon of salt
1 teaspoon of pepper
1/4 cup grated parmesan cheese
baking dish

preheat oven to 375 degrees and melt butter in baking dish until melted
in the meantime, wash and cube potatoes
toss in melted butter in the baking dish
sprinkle with salt pepper and parmesan
bake for 20 mins
remove from oven and stir
return to oven and bake 10-20 mins longer or until potaotes are tender

recipe is for 2 servings :)

    Totally trying this!!! Minus the potatoes and instead having roasted (not steamed - yuk!) veggies. Not as many carbs without the potatoes.
