Mini Protein Cheesecakes...100 cals!

Came up with this recipe last night for a yummy dessert. Only 100 calories per my calculations!

1 c. old fashioned oats
2 T. cocoa powder
2 T. PB 2 (powdered peanut butter) + 2 T. water
3 T. stevia in the raw
2 T. coconut oil

Mix together in bowl and press into the bottom of 18 sprayed muffin cups.

In large bowl, mix together:
1 package 1/3 less fat cream cheese
1 1/2 c. nonfat plain greek yogurt
2 T. PB2
1 scoop vanilla whey protein powder
1 t. vanilla extract
1/4 c. stevia in the raw
2 egg whites

Mix together and pour into muffin cups on top of crust.

In a small bowl mix together:
1 T. stevia in the raw
1 scoop chocolate protein powder ( I use MRM)
1 T. unsweetened cocoa powder
1/2 c. chocolate chips (I use sunspire)

Put one small teaspoonful into each cup, swirl with toothpick. Bake at 350 degrees for 15 minutes, until set. Refrigerate a few hours before serving.

Hope you like it! I get PB2 on amazon, it is a lower calorie peanut butter substitute that I just found. You could use regular peanut butter, but it would make the calorie count a bit higher.
