cous cous recipes?

I love cous cous! I usually use marigold stock to make it up then you can add all sorts of yummy things. My favourite is roasted peppers and onions in balsamic. Add a bit more vinegar than normal and then it get all soaked into the grains.
Or some onions, aubergines and peppers roasted in harrissa then add those to the cous cous with chick peas, chopped tomatoes, chopped dried apricots or sultanas maybe some lemon juice
I did the latter with some chopped cooked chicken and sweetcorn added for my husband and kids yesterday.0 -

If you like cous cous consider giving quinoa a try. They look and taste very similar when cooked but one is an ancient grain filled with all kinds of protein and excellent stuff and cous cous is a pasta which is still tasty but unless it is whole wheat isn't particularly healthful.0
