go to skinnytaste.com and look up the turkey stuffed peppers. they are stuffed with ground turkey rice and some other stuff. so delicious and super good for you0

ground beef, onions and rice. Sometimes ground pork is substituted or mixed with the beef.0

97/3 ground beef (less calories and fat then lean ground turkey and it tastes much better)
A homemade red sauce
I like to use Rizotto rice instead of reg. rice.
Chopped Onion.

1 can of hunt's tomato sauce
1 tube of chicken sausage

I'm going to try a new recipe.. Stuffing the peppers with HCG infused meat. Then a couple bites will fill me up so much I shall never go hungry. ;-) (BTW. I'm teasing, had to give the seahawk fan a hard time ;-) )0

I do lazy man's stuffed peppers...but I put ground beef, cream corn, garlic, and brown rice in mine. Instead of stuffing the peppers, I chop them up.0

MIne is vegetarian:
Saute one chopped onion, one chopped bell pepper and a ton of whatever seasonings you like. I use garlic powder, onion powder and crushed red peppers. Saute in a touch of olive oil or butter.
I saute about five minutes. Add four cups of water and bring to a boil. Add two cups of brown rice. Let simmer. Watch the rice, it will usually need another cup and a half to one cup of water before it get soft.
When the rice is about soft and most of the water is gone (there can still be some water), add one can of stewed tomatoes (I used the diced Italian tomatoes) and one can of tomato sauce or one can of Rotel.
SImmer a bit longer.
Spoon into cleaned out bell peppers. Put in veggie steame r that has a basket with water underneat it on stovetop and cook till peppers are soft.
Can put cheese on top when done.
I used to make this with hamburger meat. Just brown in skillet before starting with onions an dpppers.0 -
saute onion + garlic, then put a little rice and black beans a little cumin salt and pepper then I add a little bit of goat cheese.( i mix up the spices I use depending on the day) stuff that in the pepper top it off with a sharp cheese SUPER TASTY!!!0

I took a stab at stuffed peppers last night and they came out awesome and only about 250 calories. Here is what I did
Four large Green or Red Peppers (I cut them in half)
1lbs Lean Ground Turkey
2 Cups Brown Rice (dry)
1 (14.5oz) can of diced Tomatoes with Italian seasoning
1 (14.5 oz) can of Tomato sauce with Italian seasoning
A tablespoon of Italian seasoning
Half a can (the small can) of Tomato paste
Bag of Spinach (the steamer bags)
Half teaspoon of minced garlic
Cup of Weight Watchers four cheese blend (Mexican)
*Makes 8 Servings.
I boiled the peppers, about 8 minutes each
Boiled the rice
Browned the turkey
I added the diced tomatoes, tomato sauce, seasoning, rice and garlic to the turkey, brought that to a simmer. Then I dried the cooked spinach and added it. I used the tomato paste as needed to thicken up the stuffing. I placed the 8 halved peppers a baking dish. I added the stuffing to the peppers and toped it off with some Cheese. Baked at 350 for about 10/15 minutes.
YUMMY! I took the left over’s and froze them, easy lunch or dinner.0 -
I've never had stuffed peppers, probably b/c I don't eat beef. If I were to make them, I'd stuff them with brown rice and canneloni or soy beans, along with sauteed vegetables like carrots, onion, celery, garlic. All these recipes sound good .0

I use Extra lean ground turkey, brown rice and hunts (no salt added) tomato sauce0

I use shredded chicken (or ground beef) with onions, chopped peppers and jalapenos and a can of Rotel. My old way was with rice and and that was tasty but no nutritional benefit so now I use the black beans and at least get the fiber and benefits (protein, etc.) from the beans.0

I tried the chicken and white bean stuffed peppers from skinnytaste.com. They were really yummy.0

I use either lean beef or turkey or TVP (textured vegetable protein), and then I add a can of diced tomatoes, an onion, garlic, some olive oil, and (wait for it) parsley, sage, rosemary, and thyme, and cumin for good measure (one day, I was making some and wasn't sure how to season it, so I did it that way, remembering the song, and just out of curiosity, I mean the chorus is an old tune so I was thinking there had to be something to it, right? And cumin is just always a good idea. :bigsmile: ). It is SO good. Filling barely made it into the peppers the first time, I could hardly stop eating it. Yum! First I steam the peppers for 5 minutes. Makes them a little soft.
I used to take some mozzarella cheese, and put it in the bottom,
then a slice of ham about 1/6" thick. I make my stuffing using ground
sirloin, onion, diced tomatoes, and rice. Stuff the pepper with the mixture
about half way, then add some more mozzarella, and a slice of ham.
Finish stuffiung the pepper with the mixture, and bake at 350* until
inside reaches 165*.
After starting MFP, I think I'm going to have to rethink my stuffed
pepper recipe. :ohwell:0 -
Defo has to be cous cous with roasted veg, courgette, red onion, aubergine (add a splash of balsamic vinegar too). Then mix in some sun dried toms and feta cheese. Stuff. Grill/oven. Voile. Total greek freakout. It is delicious!0

If you bake them, you can stand the peppers up in a pan with about an inch of water around them to keep them moist and from burning. I love putting in the vegetable steamer with the basket because it is so much faster and I don't have to turn on the oven (especially in the heat of summer).

I'm lazy - I like Stuffed Pepper Soup (Cooking Light)
1/2 pound ground round (or turkey)
2 cups chopped green bell pepper (red & green combo is nice)
1 cup chopped onion
1/4 teaspoon black pepper
1 (14-ounce) can less-sodium beef broth
1 (14.5-ounce) can diced tomatoes, undrained
1 (10 3/4-ounce) can tomato soup, undiluted
1 1/2 cups hot cooked white or brown rice
Heat a small Dutch oven over medium-high heat. Add beef; cook 3 minutes or until browned, stirring to crumble. Add chopped green bell pepper and onion; cook 8 minutes or until vegetables are tender. Stir in black pepper, less-sodium beef broth, diced tomatoes, and tomato soup; bring to a boil. Reduce heat, and simmer 45 minutes.
Spoon 1/4 cup hot cooked rice into each of 6 bowls; top with 1 cup soup.
*Variations: for tomato soup I use Amy's or Progresso - Campbell's is super sweet (yuck). I also like to add some basil.0 -

Anybody got any stuffed-pepper recipes that don't use rice or other grains, or bread or starchy veggies?
I'm on a low-carb diet and love stuffed peppers but can't have the carbs that I see in the (delicious sounding) recipes here.0
