Eggplant Pizzas

Options
1 Large Eggplant, big enough to cut into (6) 1/2 inch thick slices
1 1/2 cups Barilla Marinara sauce
1 1/2 cups Kraft shredded mozzarella cheese, low moisture, part skim

Preheat the oven to 425 degrees.

Slice the eggplant into (6) 1/2 inch thick slices. Spray both sides lightly with olive oil and bake on a cookie sheet for 6-8 minutes, or until almost tender.

Spread 1/4 cup of marinara sauce on each slice. Top with 1/4 cup of mozzarella on each slice.

Put back in the oven until cheese is melted.

    This is going to sound really bad, but I made these for the first time about 3 years ago. My hubby and my kids didn't like them, so I ended up eating like 3 of them for dinner that night lol. They are delish!! :bigsmile:

    I love this recipee! I also like to add some hormell turkey pepperoni (17 slices is one serving of 70 calories so it breaks down to about 4 calories a slice of pepperoni). You can load up on the pepperoni skimp on the cheese and it feels like a real treat! I have also make this with zuchini
