How I can slim this muffin recipe down? Help please :)

Sweet Potato Muffins
2 1/2 cups whole-wheat flour (preferably pastry flour)
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup melted unsalted butter
1/4 cup vegetable oil
1 cup pureed or mashed cooked sweet potato
1 egg, beaten
1/2 cup buttermilk

Heat oven to 375° F. Grease 12 muffin cups or add paper liners.

Combine flour, sugar, baking powder, ginger, baking soda, and salt.

In a bowl, whisk butter, oil, sweet potato, egg, and buttermilk. Fold wet mixture into the dry; stir until just combined.

Fill muffin cups three-quarters full. Bake for 20 to 25 minutes.

CARBS: 37 G
FIBER: 3 G
PROTEIN: 4 G
FAT: 9 G

I found this recipe in Runner's World & it looks wonderful! Other than going sugar free with Spenda I have no idea how I could get the calorie count down. Any help is much appreciated!

    low fat or fat free buttermilk

    reduce the sugar by 1/3

    try applesauce instead of the oil

    2 egg whites instead of 1 egg?

    low fat yogurt instead of buttermilk?

    banana instead of oil?

    i would even reduce the sugar by 1/2 or 2/3, especially if you use banana or applesauce.

    Be aware the muffins will probably be a little dry with these substitutions.

    you could replace the sugar with dried apple pieces, so you'll get the extra sweetness without as many calories. Or you could replace with honey as you'd only need a small amount (if this makes the mixture too wet just add a bit more flour). Low fat buttermilk.

    You could use a light tub margarine instead of butter, splenda instead of sugar, applesauce or mashed banana in place of the oil, egg beaters instead of regular eggs, and fat free buttermilk.

    Honey is much sweeter than sugar so you can go as low as half the amount of sugar when substituting honey.

    1/2 cup applesauce for the butter & oil or 1/4 cup brummel & brown yogurt spread & 1/4 cup applesauce if you're concerned thatat the first option will effect flavor.

    egg whites instead of whole egg. 1/4 cup = 1 egg

    a buttermilk substitute can be made with 1 Tbsp vinegar to 1 C milk. This also works with unsweetened almond milk (which is40 calories per cup).

    Flax seed meal instead of eggs. 1tbsp per egg and water until it is a sticky consistency. apple sauce instead of oil. leave out the butter or get a vegan butter
